Harvesting
The branches of the coffee tree bear fruit called cherries. During harvest time, cherries of different maturities are clustered together on the branches and only the mature fruit are gathered, leaving the others behind. Most cherries harvested for the production of the Nespresso Premium Blends are picked entirely by hand. Extremely meticulous sorting ensures a homogeneous harvest even a few unripe beans can affect the quality of the coffee. This is how we guarantee optimum quality.
Green coffee processing
Green coffee is the generic term given to coffee after it is processed and before it is roasted. Once harvested, the cherries must undergo various transformations, since they contain two grains which will eventually produce the coffee beans. Two methods are used :
• The wet method, the method favoured by Nespresso and used frequently for the Arabica coffees. This consists of washing the cherries and separating them so that only the ripe fruit is kept. The pulp of the cherries is then removed and they are then washed again and left to dry in the sun.
• The more simple dry method consists of drying the cherries on large surfaces in the fresh air for at least three weeks without removing their pulp beforehand. The green coffee is then sorted according to its quality and sent to be roasted.
